Is there anything more appropriate to enjoy on a warm summer day than watermelon? I think not. Flawless as a big slice with some lime and salt sprinkled on, delicious as a sorbet, transform it into a salad with feta… the options are endless. One of my favorite ways to consume watermelon is in liquid form, especially if it has some lime to round out the sweetness, and a little vodka never hurts. Blended with ice, this makes for an ideal slushie.
Ingredients
- 1 cup watermelon juice (see note below)
- 1/3 cup granulated sugar
- 1/2 cup lime juice
- 8 oz vodka
- 4-5 cups cubed ice
- Lime slices and/or watermelon slices for garnish
Instructions
Heat together approximately 1/2 cup watermelon juice with sugar in a small saucepan. Bring to a simmer to dissolve sugar and let cool slightly. Pour watermelon and sugar mixture into a blender, add remaining watermelon juice, lime juice, vodka, and ice. Blend until a uniform, icy texture. Divide between glasses 4 glasses and serve with optional accoutrements.
Notes:
- For watermelon juice, you can cut up approximately 1lb of seedless watermelon, blend, and strain; this yields approximately 1 cup.
- Slushies aren’t your thing? They should be, but if you want something a little lighter, add 2 oz vodka, 2 oz watermelon juice, a spritz of lime into a tumbler glass of ice. Top with soda water.
