As someone who is obsessed with all things carbs, especially bread, the toast (and tartine) trend is totally up my alley. This prosciutto and pear toast contains a multitude of ingredients, textures, and elements that pack a ton of flavor, blend together harmoniously, and leave you wanting more. Who doesn’t love something that’s crunchy, creamy, salty, sweet, and spicy? Perfect as a light breakfast, lunch, or paired with cocktails.

Ingredients

  • 2 slices good bread (I like a dark wheat for this, but use whatever you like)
  • 1/2 cup (heaping) of ricotta (homemade is preferred)
  • 4 slices prosciutto
  • 4-8 thin slices of pear (I like an Asian pear for the crunch)
  • A drizzle of honey
  • A drizzle of extra virgin olive oil
  • Pinch of red pepper flakes
  • Sprinkling of flaked sea salt
  • 1 sprig of thyme

Instructions

Heavily toast two pieces of bread (I find it ideal when the bread is impossibly crispy and browned).

Next, spread approximately 1/4 cup of ricotta on each slices into an even layer. Slice each piece of toast in half (I prefer diagonally). Place on serving platter or plate.

Rustically place a slice of prosciutto on each slice of toast (you’ll just want to let it cascade organically). Place 1-2 slices of pear on each slice of toast before drizzling with honey and olive oil and finishing with red pepper flakes and sea salt. Lastly, pinch off the leaves from the thyme stem and sprinkle over the toasts.
